Asian Chicken Lettuce Wraps

Serves 5

For the sauce:

  • 4 tbsp. tamari
  • 3 tbsp. smooth peanut butter
  • 3 tbsp. honey
  • 1 tbsp. rice vinegar
  • 2 tbsp. olive oil
  • 1 tsp. sriracha
  • ¼ tsp. paprika
  • ¼ tsp. garlic powder

To serve:

  • 14 oz. (400g) cooked shredded chicken breast
  • 1 red bell pepper, diced
  • 1 head romaine lettuce
  • ¼ cup (50g) peanuts, roasted
  • 4 green onions, sliced

What you need to do

  1. Place all the sauce ingredients into a large bowl and whisk until well combined. Add the shredded chicken and diced bell pepper and toss to coat in the sauce.
  2. Serve the chicken mixture in a lettuce wrap, and top with peanuts and green onions.
