Lemon Chia Energy Balls

Makes 12 balls / 15 Minutes

Ingredients:

  • 5.3 oz. (150g) cashews
  • 4.2 oz. (120g) shredded coconut
  • 3 tbsp. maple syrup
  • 2 fl oz. (60ml) lemon juice
  • 2 tbsp. lemon zest
  • 2 tbsp. chia seeds

To coat:

  • 1.2 oz. (33g) unsweetened desiccated coconut

Instructions:

  1. In a food processor, blend cashews and shredded coconut into a coarse meal.
  2. Add maple syrup, lemon juice, and zest. Blend until a sticky dough forms.
  3. Add chia seeds and pulse to mix. Adjust texture with more coconut or water as needed.
  4. Roll dough into 1-tbsp. balls and coat in desiccated coconut. Chill on parchment. Store in the fridge for up to 1 week.
